Ingredients:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup coconut sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup coconut oil, melted
- 3 large eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 2 medium apples, peeled and thinly sliced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons honey, for drizzling
- 1/4 cup jam apple or your preferred flavor
Instructions:
Preheat the oven to 350F 175C
Grease a 10-inch skillet with coconut oil
In a large bowl, mix together almond flour, coconut flour, coconut sugar, baking soda, salt, and cinnamon
Add melted coconut oil, eggs, honey, and vanilla extract to the dry ingredients
Mix until well combined
Spread the batter evenly in the prepared skillet
Arrange the sliced apples on top of the batter in a circular pattern
In a small bowl, mix together chopped rosemary and coconut sugar
Sprinkle this mixture over the apples
Bake in the preheated oven for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean
Once baked, drizzle honey over the top of the cake and let it cool slightly
Serve slices of the skillet cake with a dollop of jam on the side
