Ingredients:
- 1 cup pumpkin puree
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/4 cup Greek yogurt
- 1/4 cup unsweetened cocoa powder
- 1 cup whole wheat flour
- 1/2 cup oats
- 1/4 cup ground flaxseed
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup dark chocolate chips optional
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a muffin tin
Mix the honey or maple syrup, Greek yogurt, pumpkin puree, and cocoa powder together in a large bowl until everything is well mixed
Mix the ground flaxseed, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a different bowl using a whisk
Stir the wet and dry ingredients together until they are just combined
You can add the dark chocolate chips if you want to
Fill up about two thirds of the way to the top of each muffin cup with batter
After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
First, let the muffins cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
