Ingredients:
- 4 chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup red wine
- 2 cloves garlic, minced
- 1 shallot, minced
- 1 cup chicken broth
- 2 tablespoons butter
- Fresh thyme sprigs for garnish
Instructions:
Preheat the oven to 400F 200C
Season the chicken breasts with salt and pepper
Heat olive oil in an oven-safe skillet over medium-high heat
Add the chicken breasts and sear until golden brown, about 3-4 minutes per side
Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through
Remove the skillet from the oven and transfer the chicken to a plate
Cover with foil to keep warm
Place the skillet back on the stove over medium heat
Add minced garlic and shallot, saut until fragrant
Deglaze the skillet with red wine, scraping up any browned bits from the bottom of the pan
Add chicken broth and simmer until the sauce is reduced by half, about 5-7 minutes
Stir in butter until melted and the sauce is smooth
Season with salt and pepper to taste
Serve the roasted chicken with the red wine sauce drizzled over the top
Garnish with fresh thyme sprigs
Pair with a glass of your favorite red wine
