Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 mangoes, diced
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons honey
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 2 tablespoons vegetable oil
  • 1 head iceberg lettuce, leaves separated for wraps
  • Sesame seeds and chopped cilantro for garnish

Instructions:

To make the marinade, combine the soy sauce, hoisin sauce, honey, ginger, and red pepper flakes in a bowl

Transfer the shrimp to a ziplock bag and cover them with half of the marinade

After sealing the bag, let it marinate for 15 to 30 minutes in the fridge

Vegetable oil should be heated over medium-high heat in a large skillet or wok

When the garlic is fragrant, add the minced garlic and saut it for about 30 seconds

When the shrimp are pink and opaque, add the marinated shrimp to the skillet and cook for two to three minutes on each side

Take out of the skillet and reserve the cooked shrimp

Add the sliced red onion and bell pepper to the same skillet

Stir-fry until softened, about 2 to 3 minutes

Pour the remaining marinade over the mango and vegetables after adding the diced mango to the skillet

Stir-fry for a further two to three minutes

To serve, top a lettuce leaf with a spoonful of the mango and vegetable mixture, cooked shrimp, and chopped cilantro and sesame seeds

If necessary, secure the lettuce leaf with toothpicks as you wrap it around the filling

Enchilada Pan



This is a quick and easy way to feed a family that is hungry. The chicken and cheese inside these enchiladas are very tasty, and they are covered in enchilada sauce and baked until they are done. They're liked by everyone!

Ingredients:

  • 8 flour tortillas
  • 2 cups cooked chicken, shredded
  • 1 cup grated cheddar cheese
  • 1 cup grated Monterey Jack cheese
  • 1 can 14 oz enchilada sauce
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

Preheat your oven to 375F 190C

In a large bowl, combine the shredded chicken, half of the cheddar cheese, half of the Monterey Jack cheese, sour cream, green onions, black olives, diced tomatoes, cilantro, ground cumin, and chili powder

Season with salt and pepper to taste

Mix everything until well combined

Take each flour tortilla and spoon the chicken mixture onto the center

Roll up the tortilla tightly and place it seam-side down in a greased baking dish

Pour the enchilada sauce over the rolled tortillas, spreading it evenly

Sprinkle the remaining cheese on top

Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown

Remove from the oven and let it cool for a few minutes before serving

Rum Raisin Ice Cream CPA

Ingredients:

  • 1 cup raisins
  • 1/2 cup dark rum
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

Instructions:

In a small bowl, soak raisins in rum for at least two hours or overnight

Make sure the raisins get big

Heavy cream, milk, and half of the sugar should be mixed together in a medium saucepan

Mix it and heat it over medium-low heat until it starts to steam, but not boil

Whisk the egg yolks and the rest of the sugar together in a different bowl until the mixture is pale and a little thicker

As you keep whisking, slowly pour about half a cup of the hot cream mixture into the egg yolks

This will temper the eggs

Put the egg mixture back into the pan with the rest of the cream mixture

Keep stirring the mixture over low heat until it gets thick enough to coat the back of a spoon

Now take it off the heat and mix in the vanilla extract

Allow to cool to room temperature, then cover and put in the fridge until very cold, preferably overnight

Once the ice cream base is cold, use an ice cream maker and follow the directions on the box

In the last few minutes of churning, add the raisins that have been soaked in rum along with any extra rum that you still have

Put the ice cream that has been churned into a container that can go in the freezer

Freeze it until it is firm, preferably overnight

If you want, you can serve rum-raisin ice cream with extra raisins that have been soaked in rum on top

Mini Grilled Cheese Burger



A tasty change from the usual cheeseburger are these Mini Grilled Cheese Burgers. They are hard to resist because they have juicy burger patties, melty cheese, and a special burger sauce. Great for parties or a fun dinner during the week!

Ingredients:

  • 8 mini hamburger buns
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 8 slices American cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Butter for grilling

Instructions:

Set your grill or griddle on the stove to medium-high heat

Put the ground beef, chopped onion, minced garlic, salt, and pepper in a bowl

Make 8 small burger patties by mixing the ingredients well

Put the burger patties on the grill and cook them for four to five minutes on each side, or until they're done the way you like them

Butter the inside of the mini hamburger buns and split them in half while the burgers are cooking

For a few minutes, toast them on the grill until they get a little brown

When the burgers are almost done, put a piece of American cheese on top of each one and let it melt

To make the burger sauce, mix the mayonnaise, ketchup, and mustard in a small bowl

Spread some sauce on the bottom half of each bun to start putting the mini grilled cheese burgers together

After putting a cheeseburger patty on top of the sauce, sprinkle some shredded cheddar cheese on top of that

Put the other half of the bun on top

Once the burgers are all put together, put them back on the grill for one or two minutes, then remove

Warm up your mini cheeseburgers on the grill and enjoy them!

Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through

Remove the skillet from the oven and transfer the chicken to a plate

Cover with foil to keep warm

Place the skillet back on the stove over medium heat

Add minced garlic and shallot, saut until fragrant

Deglaze the skillet with red wine, scraping up any browned bits from the bottom of the pan

Add chicken broth and simmer until the sauce is reduced by half, about 5-7 minutes

Stir in butter until melted and the sauce is smooth

Season with salt and pepper to taste

Serve the roasted chicken with the red wine sauce drizzled over the top

Garnish with fresh thyme sprigs
